Roberto Cipresso’s story began in 1987, when this young winemaker from Bassano del Grappa moved to Montalcino, starting his cooperation with famous wineries such as Case Basse, Poggio Antico and Ciacci Piccolomini d’Aragona. The expansion of his winemaking activity led him to found two wineries in Montalcino, one in Argentina and “Winemaking”, a group of oenological and agronomic consultancy.
In 1995 “La Quadratura del Cerchio” (the squaring of the circle) was born: a blend of red grapes from various regions of Italy. After several blending attempts, the wine finds its definitive consecration with the development of Cipresso 43 project: an enological production idea based on the 43rd Parallel characteristics. In addition to crossing the places where the vine was born (Georgia) and points of intense mystical energy such as Medjugorje and Santiago de Compostela, the 43rd Parallel passes on three Italian regions (Tuscany, Umbria and Marche) from which are obtained the grapes necessary for the blend from which the wine is composed.
In this 2017 vintage the blend is made up of Tuscany Sangiovese (50%) from San Quirico d’Orcia (Siena), Marche Montepulciano (25%) from Moresco (Fermo) and Umbria Sagrantino (25%) from Spello (Perugia). The selected grapes fermented at controlled temperature, with selected yeasts, in steel and truncated wooden vats, before aging, for 18 months, in Barriques, 50% new and 50% once-used.
This vintage shows a deep and impenetrable ruby red, with balsamic aromas of wild blackberry, cooked plum, black cherry in spirit, Mediterranean spices and a slight hint of boisée. The mouthfeel shows immediately a great acidity and lively and vibrant tannins, followed by a sensation of soft warmth and a good flavor, that prelude to a fairly persistent closure, on balsamic notes returns.
