
Jean-Marie Guffen-Heynen and his wife Maine came from the Belgian world of fine arts and theater when, in 1976, moved to Bourgogne Maconnais where they became administrators of a small estate. After learning the techniques of wine production, in 1979, they established the Guffen-Heynen Domain after buying some vineyard plots on the heights of Pierreclos, filling the gap due to inexperience with an almost intuitive approach both in the vineyard and cellar. Today the Domain has almost six hectares of vineyards treated according to organic and eco-sustainable principles as manual cultivation without the support of chemical additives.
Jean-Marie has openly stated that, among the lands he owns, the Pierreclos is the one he loves the most. Its 3,3 hectares lies on a very steep slope of rich brown clays with countless pierrailles (small stones), planted with a density of about 10/11000 vines per hectare.
Tri de Chavigne is the result of several successive sortings in those vines at the top of the Chavigne parcel, with a manual picking of no more than 400 grams or grape per plant. The grapes are selected and soft pressed by vertical presses, so as to release as quickly as possible the free-run must, which spontaneously ferments without industrial yeasts. The wine ages in wood barrels with regular batonnage then refines in small oak barrels, in contact with yeasts.
This 2012 pale yellow, with shades of gold, vintage smell of peach in syrup, yellow plum, pineapple, green apple crunchy, chamomile, thyme and laurel, with caramel and chalky notes and a long smoky close. The mouthfeel immediately shows great softness, almost buttery, but suddenly comes flavor and freshness to rebalance everything and lead to a toffee tasting closure.
