Duemani winery, lying in Ripadella and Castellina Marittima (on the Tuscan coast), is the result of Elena Celli and Luca D’Attoma partnership. The choice of the lands was based, from the beginning, on the need to find a suitable place for the production of international grapes such as Cabernet Franc, Merlot and Syrah. The hill on which the vineyards develop, between 200 and 300 meters above sea level, was a wild and extreme place, uncultivated for several years and surrounded by Mediterranean vegetation, with soils rich in clay and stones. After a long work of reclamation those lands proved to be ideal for the project, thanks to the excellent solar radiation and the continuous sea breezes that, combined, guarantee excellent temperature ranges, necessary for the perfect ripening of the grapes. The work in the vineyard was immediately characterized by a convinced biodynamic approach, with interventions on plants and land almost exclusively manual, based on natural and homeopathic preparations.
Among the wines at the top of the company’s quality pyramid a prominent place belongs, without a doubt, to this Suisassi, made with Syrah grapes from the Ripabella vineyard, cultivated with a high density of vines. After a first selection in the vineyard they are carefully hand-picked and collected in small wooden boxes. In the cellar, after destemming and a second selection, on the sorting table, of the individual berries, spontaneous fermentation takes place in barriques and truncated-conical vats. The subsequent maceration lasts about 20 days and is followed by the aging of 20 months in barriques (250 lt.) and tonneaux (300 lt.). The final bottling is carried out without clarification, stabilization or filtration.
This intense and impenetrable ruby red, textured and consistent, 2016 vintage opens to the nose on wood and dark chocolate tones, to tack then on red fruit, between cooked plum and cerasa, followed by notes of blood, tobacco, tomato paste, red orange, goudron, noble tanning, vinyl and sealing-wax. In the mouth the tannins are gritty and well present, the body appears slender and elegant despite such a great texture, with some blood-ferrous hints that accompany the sip until its endless closure.
