
Beniamino Zidarich wine cellar lies in Prepotto, in province of Trieste. His vineyards lay on soils of mixed white limestone and ferrous red earth soils, faceing from one side the sea winds coming from the Gulf of Trieste, and from the other the cold of the Carso Plateau.
Beniamino and Carso are an impossible combination to split if you want to understand the style of Zidarich wines. In the vineyard his rigidly organic work is meticulous, almost religious, characterized by vertiginous planting density, in the French style, with 10.000 vines per hectare, yields never exceeding 50 quintals, short pruning and manual harvesting in small crates. The cellar operation for this Vitovska “Kamen” are meticulous too: bunches are destemmed and the alcoholic fermentation and maceration (18 days) takes place spontaneously in the rock vats (Kamen) specially designed with local stones by Marko e Kristjan Zidaric in order to return to a traditional Carso prehistoric vinification technique. When the “magic” happens, and the grapes become wine, it is decanted and placed to age in large oak barrels for 22 months, without any filtration followed by a final refinement in bottle for not less than 6 months.
This 2018 Vintage shows an antique, golden-yellow color, almost nuanced with amber notes, with scents of peach, ripe apricot and golden apple with a note of thyme, white sage and mint, and hints of rosemary and bread crust. The mouthfeel is soft and wrapping, very savory and mineral with sharp freshness and excellent tannic presence.
